Named after the bustling open air market in Addis Ababa, Merkato 55 was conceived as both a culinary destination and a celebration of Africas diversity. With a menu that drew from across the continent, and interiors inspired by African textures and aesthetics, it offered guests more than food - it offered an experience of cultural immersion.

As founder and creative force, Unik envisioned Merkato 55 as a space where Africas influence could be recognized, respected, and enjoyed in one of the worlds most competitive hospitality markets. It was bold, ambitious, and years ahead of its time.

In 2007, Unik Ernest launched Merkato 55 in New York Citys Meatpacking District - the first fine dining African restaurant in the United States. At 15,000 square feet across two levels, it was more than a restaurant; it was a cultural statement that positioned African cuisine and design at the center of Manhattans dining scene.
